Green olives are picked unripe or semi-ripe; olives fully ripe on the tree shine dark to black.

Brownish and brown olives are in between: they are no longer unripe, but also not yet fully ripe. Green olives usually taste somewhat milder and sourish-piquant; black olives have a very savory and, depending on the variety, often more or less bitter taste.
