Description: The taste is highly aromatic and at the same time pleasantly mild, because the focus is not on the spiciness, but on the wonderful flavor of the chili variety. 

Usage: The intense aroma of the chilies harmonizes with grilled meat, sauces of all kinds and fish dishes. Some swear by Piment d'Espelette in egg dishes such as fried eggs or omelets. 

Background: Just as real Aceto Balsamico di Modena comes only from Modena, Piment d'Espelette has been grown for centuries in the region around the small town of Espelette in the Basque part of southwest France, and only there. Piment d'Espelette is a popular chili spice from France, obtained from the very aromatic chili variety called "Gorria", which was once brought to France from Mexico by Basque sailors.

The Ferme ATXANIA: Our spicy bell pepper comes from "Ferme Atxania". The Olhagaray family, owners and operators of "Ferme Atxania" can be described as Basque traditionalists and primitive. The family has been running the farm in the Basque Country for generations. Meanwhile, the son Ramuntxo leads the fortunes of the small estate. With dedication and the utmost care, the delicious allspice is cultivated on an area of about 2 hectares.

AOP (Appellation d'Origine Protegée) is the French seal of controlled origin.
