Description : Aged on the lees for at least 25 months, this premium cava is turned by hand. A cava with a subtly nutty, finely yeasty nose (apple sauce, mushrooms, brioche), finely balanced on the palate, almost mild on the tongue, but also apple-fresh, delicate and elegant. A delight.

The winery - a Spanish reference: The Pago de Tharsys winery is a pure family business owned by the couple Vicente Garcia (father of Valencian cavas) and Ana Suria. The bodega is located in the middle of the vineyards (Pago), which belong to the D.O. (Denominacion de Origen) Utiel-Requena. The company's own vines are cultivated on almost 12 hectares. The special location of the cellar in the middle of the vineyard allows short distances, so that there are only a few minutes between harvest and processing, thus avoiding pre-fermentation of the grapes.
