The label of this cava shows a snake on a piece of ceramic, coiled around a grape and squeezing out its juice. The snake symbolises wisdom, strength and immortality, values that are reflected in this cava.

Production is limited to just 3,200 bottles.

Description: After a careful ageing period of over 34 months (Gran Reserva), it develops a complex, harmonious bouquet. Bright golden yellow colour, fine, homogeneous bubbles that rise slowly and form a very fine, delicate and persistent crown.

In the nose: Intense aromas of white flowers, fresh stone fruit and citrus fruits: Lemon and grapefruit peel. Subtle notes of tea leaves and spring vegetation: moss, wet stone. Notes of delicate almonds also emerge.

On the palate: Fresh and clean entry, dry and with a fantastic and lively acidity in balance with the flavours of stone fruit and citrus fruits. Great structure, volume and creaminess on the palate. Long finish on the palate, leaving a delicious almond aftertaste.

Elegant, fresh and balanced on the palate - a delight for the senses.

Serving recommendation: Best enjoyed between 7°C and 9°C in a medium-sized, full-bodied glass, slightly closed at the top. Gently swirl the Cava over the rim of the glass to maintain the perlage. It is the perfect accompaniment to sashimi, oysters and caviar.

It goes perfectly with good music and a beautiful view of the sea or a snow-capped mountain.

The winery - a Spanish reference: The Pago de Tharsys winery is a family business owned by the couple Vicente Garcia (father of Valencian cavas) and Ana Suria. The bodega is located in the centre of the vineyards (Pago), which belong to the D.O. (Denominacion de Origen) Utiel-Requena. The company's own vines are cultivated on almost 12 hectares. The special location of the cellar in the centre of the vineyard allows short distances, so that there are only a few minutes between harvest and processing, thus avoiding pre-fermentation of the grapes.

The company's philosophy is not only to produce quality wines, but also to create a natural environment that respects the ecosystem. The winery has a natural underground cellar, modern winemaking facilities, a distillery and a remote rural lodge. Pago de Tharsys produces quality wines and is considered a pioneer in the production of cavas.
