Arctic thyme is an herb that grows only in the subarctic climates of Iceland, Greenland and the Faroe Islands.  Its season is fleeting, blooming for only a few short weeks in the summer.  For Icelanders, the scent of Arctic thyme evokes adventures in the highlands and exploring the beautiful Icelandic landscape during the endless daylight of the Arctic summer.

Taste: Arctic thyme belongs to the thyme family, but has a sweeter taste and a lavender-like scent. Combined with our sea salt, it adds a herbaceous note to all creations and a true expression of Iceland's wild nature.

Recommendation: Goes very well with lamb and meat dishes. The spicy-tart aroma equally refines vegetables, salads and fish.

Saltverk - The Company: Iceland, on the small peninsula of Reykjanes, in the bay of the Westfjords is home to co-founder Björn Steinar Jónsson's small traditional company Saltverk. 

Reykjanes has some of the cleanest seawater imaginable. Here, the nutrient-rich Arctic polar current sinks into the ocean depths and forms the food source for whales, seals and seabirds. This unique polar water is also the raw material for the sea salt flakes produced according to centuries-old tradition. 

For the evaporation of the water and extraction of the salt, only geothermal energy is used, which comes from the surrounding geysers. Thus no CO2 emissions are produced. The flakes are skimmed and dried by hand.
