Producer Il Molino: The Azienda of signora Annalisa Torzelli, olive oil producer and farmer with passion and heart, is located south of Tuscany, in Lazio. Annalisa's grandparents were already farmers who devoted all their labor to the cultivation of olives and the production of olive oil. In the meantime, she has completely taken over her grandparents' estate and built her own mill. She immediately decided to go for consistent organic farming.

Il Molino practices exclusively organic farming. Only their own olives are milled in their own oil mill. The olives are harvested using the frond-net technique. Once they have fallen into the wide nets, they are picked by hand and placed in ventilated containers and immediately taken to the mill for grinding.

Annalisa is also a recognized olive oil taster, which highlights her expertise. In addition to olives, organic cereals of the ancient Senatore Cappelli variety are also grown.
