Description : Aged on the lees for at least 25 months, this premium cava is turned by hand. A cava with a subtly nutty, finely yeasty nose (apple sauce, brioche), finely balanced on the palate, almost mild on the tongue, but also apple-fresh, delicate and elegant. A delight.

The long maturation on the lees gives it a creamy texture and complex flavours of baked bread, dried fruit and a hint of vanilla. The fine mousseux rounds off the flavour experience perfectly and ensures a pleasantly long-lasting finish. This cava is the result of careful processing and ageing, which give the wine depth and character. It is ideal as an aperitif or as an accompaniment to fish dishes, white meat dishes and cheese.

The winery - a Spanish reference: The Pago de Tharsys winery is a pure family business owned by the couple Vicente Garcia (father of Valencian cavas) and Ana Suria. The bodega is located in the middle of the vineyards (Pago), which belong to the D.O. (Denominacion de Origen) Utiel-Requena. The company's own vines are cultivated on almost 12 hectares. The special location of the cellar in the middle of the vineyard allows short distances, so that there are only a few minutes between harvest and processing, thus avoiding pre-fermentation of the grapes.
