Brief description: Cherry red colour with hints of violet, very clean and pure presence. Red and black fruits emerge against a smoky and spicy background. Fresh and fluid on the palate with an inviting combination of Mediterranean fruit flavours, balsamic and aromatic herbs.
A sophisticated, intense wine with barrel ageing and a nice barrique note. Goes well with meat dishes or as a single wine for connoisseurs and cigar smokers.

Grape varieties: 60% Monastrell, 40% Garnacha
Vinification: The winemaking is very traditional and blends destemmed grapes (destemming involves separating the stems of the grapes from the berries) with 30% whole grapes.
Fermentation in limestone tanks from a quarry near the winery. Short maceration of 8 days. After pressing, the wine is transferred to French oak barrels where alcoholic fermentation is completed and malolactic fermentation takes place. Maturation in French oak barrels for 9 months. After a light fining, it is bottled unfiltered.
The winery: The vineyards of Bodegas Saura are located in a unique enclave that is home to numerous animal species such as the arrui, the mountain goat, the wild boar, the vulture, the eagle and the eagle owl. Along the winding paths that lead from one paréala to another, it is possible to have a fleeting encounter with these species, unique spectators of the development of the vineyards.
A horseback ride through the mountains provides a wonderful opportunity for these encounters, as well as the chance to observe how the vineyards occupy small hilltops.
Bodegas Saura run a project to preserve and care for these species and their habitat, which is part of the project's philosophy. These vineyards and their fruits would not be understood without the untamed nature that surrounds them.
