Description: Fermented in the bottle, aged on the lees for at least 14 months. A dry cava with fine perlage, fruity body and floral notes. In the glass it presents itself golden yellow. To be drunk very cold, at about 6°C.

The Pago de Tharsys winery is a pure family business owned by the couple Vicente Garcia (father of Valencian cavas) and Ana Suria. The bodega is located in the middle of the vineyards (Pago), which belong to the D.O. (Denominacion de Origen) Utiel-Requena. The winery's own vines are cultivated on almost 12 hectares. The special location of the cellar in the middle of the vineyard allows short distances, so that only a few minutes lie between harvest and processing and consequently a pre-fermentation of grapes is avoided.
