The Cornicabra Olive: This native variety is appreciated not only for its agronomic robustness, but also for the large quantities of oil that can be extracted from it. It is the only oil variety protected by the Montes de Toledo Denomination of Origin. Due to its high resistance to cold winters and hot summers, Cornicabra oil has always been the predominant variety in Castilla-La Mancha. Casas de Hualdo Cornicabra is produced from olives grown in the higher olive groves, which are located on calcareous and light soil
Producer - the estate: The Tagus, the largest river in the Iberian Peninsula, forms a very typical landscape in the province of Toledo, which in the southern section reaches up to the foothills of the mountains. On a slightly undulating topography, at about 400 to 600 metres above sea level, lie the olive groves of the family-run Casas de Hualdo.
The climate is harsh, with cold winters and dry, very hot summers. However, modern irrigation techniques can be used to specifically promote the quality of the fruit. The mill is located in the middle of the finca, so that the shortest distances from harvest to pressing ensure exceptional quality. A great deal of effort is put into controlling and checking every step. The finca has already been voted the best mill in Spain. The oils regularly win many national and international competitions.
Since the 90s, olives of the highest quality have been cultivated at Finca Casas de Hualdo to produce a complex and interesting oil.
Taste: intensely fruity, medium almondy. On the palate, the oil reminds of ripe, almost sweet fruits with a slight bitterness. Fine grassy green spiciness. The Cornicabra olive produces an oil full of character that remains stable over time.
Excellent with raw vegetables, meat and fish. Great with cheese.
