Grape varieties: 100% Garnacha
Vinification: The winemaking is very traditional, blending destemmed grapes with 50% whole grapes. Fermentation takes place in limestone tanks from a quarry near the winery, with twice daily pumping over. Maceration for an average of 10 days. After pressing, the wine is transferred to oak barrels where it completes alcoholic fermentation and undergoes malolactic fermentation. After a slight clarification, the wine is bottled without filtering.
The sites: The Monastrell and Garnacha vineyards are high altitude vineyards, as the winery is located between 780 and 1200 metres above sea level. The dry climate typical of this location subjects the vines to an extraordinary effort, resulting in a unique expression of these fruits and their wines.
The vineyards are located in the DO Bullas Protected Designation of Origin region. A region whose relationship with wine goes back thousands of years.
The Bodega: The vineyards of Bodegas Saura are located in a unique enclave that is home to numerous animal species such as the arrui, the mountain goat, the wild boar, the vulture, the eagle and the eagle owl. Along the winding paths that lead from one paréala to another, it is possible to have a fleeting encounter with these species, unique spectators of the development of the vineyards.
A horseback ride through the mountains provides a wonderful opportunity for these encounters, as well as the chance to observe how the vineyards occupy small hilltops.
Bodegas Saura run a project to preserve and care for these species and their habitat, which is part of the project's philosophy. These vineyards and their fruits would not be understood without the untamed nature that surrounds them.
