One of the most important characteristics of olive oil production, apart from the careful washing of the olives, is the cold processing of the pulp without adding water. Apart from the saving of water and the resulting ecological advantage, this preserves the qualitative characteristics of the oil in the best possible way.

All these factors contribute to the absolute authenticity/uniqueness and the high quality of the oil produced, which is characterized by excellent properties, in particular a low acidity, a high content of secondary plant compounds (polyphenols) and vitamin E (tocopherol) and, last but not least, an excellent taste.

Tenuta MANCINI- the producer: a traditional family business since 1656.Under the Calabrian sun, on the hills between the Tyrrhenian Sea and Mount Mancuso, the Mancini family has dedicated itself for many generations to agriculture and in particular to the cultivation and harvesting of olives and the production of extra virgin olive oil.

The Azienda extends over a total area of about 70 hectares, 37 of which are occupied by the olive groves. The groves are divided into three segments/sites : the Serra, Campodorato and Porta Vecchia.

The plantation is composed exclusively of "Carolea" olives, a characteristic cultivar of Southern Italy and especially of Calabria. The trees are mostly centuries old, although there are a few settlings of younger plants.

The olive groves are located on hilly terrain above the Tyrrhenian Sea at an altitude between 100 and 500 meters above sea level.

Taste: balanced blend of fruity, tart and spicy aromas, with a strong spicy note and sometimes reminiscent of fresh almond, artichoke or tomato. Pleasant spiciness and slight bitterness.

Best suited for hot and cold dishes. Salads, raw vegetables and vegetables, as well as fish. Also enjoyable as an "olive oil dip" on bread.

PICUAL: This olive variety is considered the "Queen of Olives" in Spain. It produces an intense olive oil with very high polyphenol content and very low acidity (< 0.20%). Due to its high content of antioxidants, the oil of the Picual variety is the most stable, has great resistance to rancidity and retains its properties for a longer time, two or three times higher than in the other varieties.

Producer: Soler Romero is a pure family business, founded in 1850 in the olive heart of Spain, near Jaen (Andalusia). In the early days, the activity was limited solely to the cultivation of olives. As part of a cooperative of 1400 members, the olives were processed into a mass product of inferior quality. In 2001, the company was separated from the cooperative in order to meet its own quality standards. With the goal of producing the world's best olive oil, the company built its own oil mill. This allowed to control the whole process, from the cultivation of the olives to the extraction, bottling and storage of the olive oil. This control is indispensable to be able to produce an olive oil of the best quality. Just as they were committed to the best quality, they also placed the utmost importance on sustainable and ecological cultivation. This led to the BIO certification in 2002. Today, the Soler Romero family is one of the pioneers of organic farming in Spain. With a cultivation area of about 600 hectares, Finca Cortijo El Tobazo is also one of the largest organic producers in the country. Tradition, generational know-how and the optimal geographical location allow the family to be very close to your claim to produce one of the best olive oils in the world.

The company: Azienda La Valle Tenuta : A traditional family business in its third generation since 1927. 

Already in the early 1900s, the first generation of the family started to cultivate olives. The passion to cultivate an area particularly suitable for the extraction of yellow gold, the tenacity to embark on a journey into the unknown and everything uphill have made the traditional company what it is today. 

It all began with the passionate and far-sighted signore Carlo Rota, who, together with his brother Salvatore, had the idea of milling the olives he produced himself. The idea of building a traditional mill with stone millstones took shape and in the centre of the small village in the hills of the Marquisate of Crotone, the two brothers saw their dream come true.

The small oil mill in the centre of the village is now a meeting place where farmers gather and wait patiently to take home the oil, the fruit of the olives they have cultivated so much over the last few months.  

The enthusiasm and passion for authenticity and tradition are passed down from generation to generation, the knowledge of this work is passed from father to son and from son to grandson, and now even the third generation is getting into this great love of olive oil.

Today the Azienda counts a remarkable 13500 olive trees. The technology has also been adapted to modern times, so that an optimal oil quality is guaranteed. 

The authenticity and quality of the products are maintained unchanged; the values and tastes have remained those of the ancestors. Passion and quality are the absolute strengths of the company.

Produced from the olive variety Arbequina and of course from own cultivation. The Picual olive is the second most common variety in Spain. It provides a rather mild olive oil with good vitamin E content (tocopherols) and a very long shelf life. The challenge for olive oil growers is to "tame" this olive. This means choosing the best harvest time. Likewise, in the processing process to create the balance of the possible flavors.
